Anchovy and Cornelio Bake

Ingredients

  • 36 fresh anchovies (boned)
  • 2 yellow peppers
  • 1 vine tomato
  • marjoram
  • extra virgin olive oil
  • salt and pepper

Preparation

Grill the peppers for a few minutes, then slice them fairly finely. Put salt, pepper and marjoram on the anchovies. Take 4 small ceramic flan dishes and fill each one with 3 layers of anchovies (total 9 per dish), alternated with 2 layers of peppers. Drizzle a little oil over each one. Lay the flan dishes on an oven tray and cook at 180°C for 10-12 minutes. Peel the tomato, take out the seeds, dice it and dress it with olive oil, salt and marjoram. Once the anchovies and peppers are cooked, tip them out of the dishes and garnish them with the diced tomato.
